I would like to try recording videos for challenges and possibly LP's, but I would like to record off the actual systems: Gamecube and GBA, PS2, N64, SNES, etc. Does anyone have any ideas on how to do this? That means no emulators.

Use a Capture Card or Capture Device (e.g.: Dazzle DVD Recorder, GameBridge) for recording off of your television, using either your TV or computer as a medium. For the former option, your TV must have Output - as well as Input - RCA (those red, yellow, white cables) jacks. For the latter option, you need only the right hardware and your game console.
There are more detailed guides all over the internet, depending on the hardware you use, but most of the time, the manual accompanying the hardware should suffice.
You may need to download a good video codec, however, to prevent quality reduction; I suggest ffdshow and CamStudio Lossless codec. A simple search on the internet would yield those fairly quickly, and for free. If the hardware comes with a free video codec, though, use that one, or test various codecs out; some hardware only cooperate with their own custom codecs, whereas others just select their own as the default / most compatible.

I use a capture device, and since then, my TV i useless. All my consoles (well I only have 2 ) are plugged directly on my PC

If you need help with recording your VOICE, than google "Audacity". It's a great voice modifying program, and it's free. If you master it, than you can even go abridged series jumping (like me XD)

... Or a possibly more expensive solution is to get either a webcam (and a recording program) or a video camra. I have a friend who uses a $500 camra to record a Subspace emissary playthrough, the quality isn't that bad either.

I think he'll pass with your friend's 500$ camera >_>

Thanks for all your help. I got Pinnacle editing software and that came with a way to hook just about anything to it, even a professional camera. Now I'm out $150 but it came with everything I need along with a green screen. Besides, if I wanted a camera, I'd just borrow one from my collage. I even have a test for it and that was with knowing how to manually switch all the features to my needs.
